Are these not the prettiest popsicles ever?! Trust us when we say, the taste just as good as they look. These Circus Animal Cookie Popsicles are beyond simple to create. In fact, they take just one step & then you're done! Well, of course, being that they're popsicles they have to freeze for a little while but the time it takes for you to create them? Maaaaybe 10 minutes? If it even takes that long! The base is made from greek yogurt & milk along with a bit of sugar & vanilla extract for some extra flavor & sweetness. You then add the cookies to the mold which make for an incredible crunch in these otherwise super smooth popsicles. These are a great dessert option as they're super satisfying & not as bad for you as most typical desserts! Plus they're super refreshing during the warmer temperatures we're finally experiencing!
Some of our other favorite popsicle recipes include: coconut water gummy bear popsicles, apple cider popsicles, rainbow popsicles, & lemonade popsicles. All of them are also really simple to create & taste SO good.
- ¾ cup plain Greek yogurt
- ½ tsp pure vanilla extract
- 1¼ cup milk
- ¼ cup granulated sugar

- In a large skillet, combine milk & sugar over medium heat. Stir until sugar is dissolved. Place milk mixture into a large mixing bowl & allow to cool for at least 5 minutes. Stir in the Greek yogurt & vanilla. Pour mixture into popsicle mold. Add in a few cookies & extra sprinkles. Place in freezer for minimum 12 hours. Serve & enjoy!
